Don’t you get tired with the boring breakfast oats porridge? Changing the porridge toppings from dried fruits to fresh fruits, nut butter, different variety of milk could do the trick. But what about black rice porridge instead of the boring oats?
This recipe reminds me of the most popular dessert in Thailand, Mango Sticky Rice, just a breakfast version of it. Black rice has high antioxidant and detoxifying properties; they are packed with fibre to help with bowel movements and natural cleansing as well as are a good source of protein.
1 cup cooked black rice
1/2 cup of coconut or almond milk
1/2 ripe fresh mango
Other toppings of your choice (almond butter, shredded coconut, fresh fruits)
Pre-cook a large pot of black rice a night before. You can serve a portion of it with your lunch or dinner and leave the remaining for the breakfast porridge.
Heat the milk and rice in a small pot over the low heat.
Once ready, serve it with sliced mango and other toppings of your choice.
